Our Food Lead is responsible for managing food service operations within the program as directed by the Food Service Manager and steps in as Food Service Manager in his/her absence. Ensure program follows policies and procedures and meets the requirements of the contracts and Standard Operating Procedures.

What you will be doing:

  • Oversee the day-to-day DFAC operations to serve and prepare food and beverages.
  • Takes Direction from the Assistant DFAC Manager and Executive Chef
  • Serves as a technician or technical manager in a narrow function when Managers are out of the DFAC.
  • Create and update all SOP's required for the Dining facility.
  • Plan for and purchase food for the food service program.
  • Ensure food in storage meets adequate levels of nutrition and sustenance.
  • Maintain required records including food production, inventory, income/expense, meal counts and personnel records.
  • Ensure program follows proper sanitation procedures as stated in the contract and SOP's or default to Serve Safe standards.
  • Preside over all food service employees that fall under the DFAC 's responsibility.
  • Ensure safety standards are maintained throughout the food service operation to include: Food process from delivery to table, staff health and welfare
  • Prepare and serve the food.
  • Plan menus.
  • Respond to customer preferences and complaints.
  • Budget for the BDFA standard set by the contract
  • Plan and budget for future meals.
  • Purchase and maintain all DFAC Equipment
  • Ensure dining experience is satisfactory.
  • Hire, recruit, and train employees.
  • Deliver orders to appropriate customers.
  • Direct the cleaning of the dining area and kitchen including the utensils.
  • Maintain employee records, prepare payroll, and complete paperwork to comply with laws and regulations.
  • Archive documents as prescribed in the SOP.

What you need to qualify:

  • Degree from a 4-year College, University or Culinary School or 3 years related experience and/or training; or equivalent combination of education and experience - Military service working in Food Service MOS 
  • Must be a US Citizen with the ability to obtain US government clearance
  • Valid US passport.
  • Must be able to fluently read, write, speak, and understand English.
